Bharle Vange (Stuffed Brinjal)


Now Brinjal is one thing i totally dislike and i did a lot of nautanki whenever my mom made it... but now my husband absolutely loves them .... hence i hv learnt to make them and also eat them :(

Maharashtrian bharli vaangi (stuffed brinjal)

Ingredients:-
6-7 small round brinjals,
1 chopped onion
1 potato chopped
2 tomatoes chopped
1/2 tsp turmeric powder
salt
1 tsp Garam masala

For masala
1 cup dry shredded coconut
1/2 inch ginger chopped
5-6 garlic flakes chopped
3-4 cloves
1 inch cinanmon
4-5 miri (black pepper)
1 small onion chopped
1 tsp chili powder
tamrind juice

Method
1. Remove stems and give four slits (not fully) to the brinjals. Wash them in salt water and keep aside.

2. Roast onion, garlic, ginger, cloves, cinanmon, miri and the shredded coconut together till light brown. Allow it to cool. Powder this mixture in a grinder along with tamarind, chilli pwd and salt

3. Fill all the brinjals with above masala.

4. In a pan heat oil and add onions. When they are sufficiently cooked add turmeric powder, potatoes, tomatoes and a little salt.

5. Add the brinjals. Also add in the remaining masala in the pan alonside the brinjals. Pour in some water.

6. Cover and cook over medium heat for about 15 min. Or can be pressure cooked for 2 whistels

7. Remove the lid and add garam masala. Stir and garnish with coriander leaves.



Serve hot with chapati or rice.
